Andorran style river trout

Thanks to our territory's many rivers and high mountain lakes, fishing is a very popular sport in Andorra. If you enjoy fishing, keep in mind that this activity is controlled and regulated in the country to protect fish species. The country's salmon-like species include the native trout, which is usually found in rivers, while brook trout and rainbow trout are more common in the high mountains.

There are different recipes for trout dishes throughout the Pyrenees, although the best known here are the El Pallars style or Andorran style trout, baked trout and river trout omelette.

In the case of Andorran-style trout, the essential ingredient is fatty ham. The oil it releases when cooked adds extra flavour to the dish.

Trout is a very common fish on summer menus in all traditional farmhouse restaurants. A simple, light dish to enjoy for lunch or dinner.

RECIPE

Method for 4 people:

Wash the river trout with cold water and dry well.

Start by seasoning and flouring the trout.

Fry them in a little sweet fat or oil and set aside on a plate.

In the same pan, fry the ham and, when cooked, place it on top of the trout.

Sprinkle trouts with a little oil or fat from the pan and serve. Exquisite! Perfect with a good wine from the country.

The preparation of this recipe is easy and takes about 20 minutes. It is delicious and ideal for the summer.

Ingredients for preparing the Andorran style river trout:

-4 river trouts
-8 slices of fatty ham
-A little sweet fat or oil
-A little flour
-Salt
-Pepper
